AyAyAy! sits in a strip plaza off Horizon Ridge in Henderson and cooks way above its address. This is real regional Mexican, not combo-plate stuff: birria memelas, tinga tostadas with oyster mushroom, and a molcajete piled with shrimp, steak, and cactus. Guacamole gets mashed tableside, and the cocktail list names its drinks after old Mexican songs. Ask for the La Llorona if you like mezcal, or keep it easy with a Cadillac Margarita.
